When can I feed my child stage three baby food?

My baby is seven and a half months and when I go to the store on the Gerber jars it says sitter. He is a sitter, feeding himself, and crawling. So when is it safe to give him stage three baby food? He has one tooth and knows how to move his jaw. Any help would be great!!
